The king of all roasts taken to a new level, with the wagyu even more richly marbled than our Australian free-range prime rib. Sea salt is all that’s needed to bring out the sweet natural beefiness of wagyu. Slowly roasting at low temperature to allow the meat to gently cook produces a beautifully even doneness throughout the whole roast. The extended roasting time also helps to intensify the beefy flavour and allows for natural tenderising to happen. The result is blushing pink slices of beef that are tender and rich in flavour. This is a smaller cut of prime rib perfect for an intimate dinner or small family meal. Classic sides are mashed potatoes, creamed spinach and horseradish cream. Or perhaps you can pair it with another of roasts to bring more variety to your feasting table!
